There are gun safes that are “100% mechanical with no digital access” (i.e. mechanical dial combination).
Hollon makes some (I think they still do, they used to have a gun safe model with a mechanical dial combination).

they carry most if not all the companies that make gun safes.
There are roughly 50’ish companies that make gun safes and a lot of them have both electronic and mechanical dial combination models.
… also, some/most of the companies that showcase-advertise only their electronic models will be able to supply one of their electronic models with a mechanical dial combination instead if you ask them.
So overall, there are lots of mechanical dial combination gun safes to choose from.
